A Little Something Sweet For Dad

Father's Day is just around the corner, and as much as we love beautiful gifts (for example our Dad's Gift List from last year), this year we wanted to get our hands dirty and make something from scratch. And when we came across "Fudgy Guinness Brownies with a Whiskey Caramel Glaze", well, we knew we had found the perfect treat for any dad with a sweet tooth. 

This recipe takes a little more than an hour to make from start to cooling and makes about 16 brownies. We also loved stocking up on chocolate, vanilla bean paste, and butter from Duchess to ensure the brownies were to die for! After all, they are a gift for dad.

INGREDIENTS 

 For the Brownies

1 cup of stout (we used Guiness)
12 ounces of bittersweet (or dark) chocolate 
1 cup of unsalted butter
1 1/2 cups of sugar
3 large eggs
1 teaspoon of vanilla
3/4 cup of flour
a dash of salt 

For the Whiskey Caramel Glaze

1/2 cup of sugar
1 1/2 tablespoons of butter
1/4 cup of Scotch Whiskey
1 tablespoon of the Guinness reduction (saved from earlier)
3/4 cup of icing sugar
1-2 tablespoons of heavy cream
a dash of salt 


 
1. Start off by preheating your oven to 350 degrees, greasing and lining an 8" square pan with parchment paper.

2. Bring the stout to a boil in a small sauce pan and let simmer until it's reduced to 1/3 of a cup (roughly 10-12 minutes).  Set aside 1 tablespoon for the whiskey glaze.

3. Using a double boiler, melt down the butter and chocolate until the chocolate is completely smooth. 

4. In a separate large bowl whisk together eggs, vanilla, and sugar, then pour in the chocolate mixture followed by the 1/4 cup of reduced stout. Finally fold in the flour and salt (be careful not to over-stir) and pour the batter into the prepared 8" pan. 

5. Bake in the oven for 45 - 60 minutes (be sure to check on it after 45 minutes to ensure it doesn't burn) until the top is shiny and cracked and a toothpick goes out clean when inserted into the middle of the pan. 

6. Let the brownies cool on a cooling rack for 20 minutes then remove from pan using the parchment paper and let completely cool. 

 Once your done making brownies, it's time to make the whiskey caramel glaze. 

1. In a heavy saucepan mix together two tablespoons of water and sugar until combined over medium heat and then stop stirring. 

2. Continue to cook, stirring occasionally, until the sugar turns into a rich amber color. 

3. Take off the heat and add butter and whisk until combined. Then add the whiskey, salt and left-over Guinness reduction. 

4. Continue to cook over low heat until the glaze is smooth and then let cool to a warm temperature. 

5. Using an electric mixer beat in the powder sugar and add the heavy cream. 

6. Finally pour the whiskey glaze over your cooled brownies and let the glaze set up before eating! Enjoy!
