The Late Harvest LUX Cocktail

Yesterday marked the end of summer with the autumnal equinox, but in light of the beautiful warm fall days we have been having, we thought one last perfect cocktail to transition into the season was needed. This drink pulls the best of summer (specifically the crushed ice of a snow cone), with the bright flavours of fall. The LUX Late Harvest Cocktail is based on the popular 1920's Sherry Cobbler with a twist (or rather a pinch of spice) and the perfect accompaniment to a late autumn afternoon spent outdoors. 




Ingredients 

6 ounces of Sherry
2 ounces of Whiskey
2 Tablespoons Marmalade (with large pieces of orange peel)
1/2 Teaspoon Cinnamon 
2 Tablespoons Fresh Squeezed Citrus Juice 
2 Dashes of Bitters 
1 Tray of Ice Cubes 


Steps 

1. Fill a small ziploc bag with ice and seal shut leaving a small crack for air to escape. Wrap the bag of ice in a tea towel and using a meat cleaver (or in a pinch a hammer) crush ice. Then fill bar glasses 3/4 full with crushed ice. 

2. Combine the sherry, whiskey, marmalade, cinnamon, bitters and citrus juice (we recommend mostly orange juice with a bit of lemon) in a cocktail shaker and shake for about 20 seconds. 

3. Strain and pour the shaker contents over the crushed ice and then garnish with a slice of orange and a sprig of mint.
